In the community of Talea de Castro, local producers use various techniques to create a clean and sweet flavor in the coffee. They hand-pick cherries, which go through 24 hours of fermentation before being pulped. After that, the coffee is fermented in tanks for 48 hours before being dried on patios. Talea de Castro aims to increase the participation of women producers each year. Currently, the rate stands at around twenty-five percent and is growing.
