Los Pinos is one of the main coffee communities of Talea de Castro, a village in Sierra Norte, Oaxaca. Los Pinos is a working group comprised of around 23 producers, led by Doña Esperanza Cristóbal. Each producer processes their coffee separately at their farms or nearby processing areas and delivers dry parchment to the town square, where the group mills the coffee to prepare the parchment for shipment. Los Pinos is a sweet, full-bodied coffee with notes of plum, brown sugar, and citrus.
