In Antigua, Guatemala, on the farm of coffee matriarch Maria Zelaya, Beneficio Bella Vista grows Bourbón and Typíca trees on the 110-hectare farm, Hacienda Carmona, at elevations between 1580 and 1890 meters above sea level. Bella Vista upholds Maria’s fierce dedication to producing quality coffee, and maintains her beautiful beneficio. Hacienda Carmona is processed in the traditional washed manner: the skin of the coffee cherry is depulped before subjecting it to a 24-hour fermentation process to break down any remaining sugars on the seed, and finally, the coffee is sun-dried on patios.
