About Ace:

Ace is Ritual’s first true single-origin “omni-roast.”

What’s that, you ask?

Well, historically we have developed roast profiles (let’s call them recipes) for each of our individual single-origin coffees based on the brew method associated with them, with most of the coffees geared toward filter roasts in our unique, lightly roasted, “let’s not get in the way of a good green coffee” style.

This means most of our coffees are roasted specifically for drip or pour-over brewing methods- with the notable exception of our seasonal espresso blend and our “Sweet Tooth” line of single-origin espresso. These coffees are expressly earmarked and developed for espresso preparation (pressurized hot water forced through the grounds.)

Being vastly different methods to prepare coffee, we haven’t been able to offer a single farm coffee that would perform amazingly as both a filter roast and an exceptional espresso – until now.

The lighter roasting style we’re known for often requires more care and precision during the brewing process, but we also realize that not everyone always has the time for that. This offering can be trusted to perform admirably no matter the method or level of precision – whether a scale or a scoop, you really can’t lose.

About La Bandera:

Like many coffee producers, Diego Hidalgo grew up on the farm that is now his today. While his father was busy selling the family’s coffee to local cooperative Coopedota, Diego was coming of age. In 2011, he set out for the USA with dreams of providing a stable future for his family. It was here, in the specialty coffeehouses of the US, that Diego saw a potential for success in the farm – if he could produce coffee of high enough quality to sell directly to specialty roasters around the world.

Diego returned to Santa Maria de Dota and invested all of his savings back into the farm, reorganizing farm management to produce the highest quality possible and purchasing the necessary equipment to process all of the harvest himself. Diego keeps every collection from every section of his farm separate- ensuring that the outstanding pickings from every harvest aren’t dulled down through blending.

The cherries are all processed on a meticulously calibrated Penagos ecopulper, giving Diego the artistic flexibility to produce his green coffee in a variety of styles. Finally, the coffee is dried long and slow on moving mesh racks, where Diego can have an incredible amount of control in the process.

This is our fourth year working with La Bandera, and we couldn’t be happier with the coffees presented to us.
