Kalita Wave
The Kalita Wave is fantastic at evenly extracting your grounds. With its flat bottom, three outlet holes, and fairly vertical sides, it forces water to flow in columns through the coffee bed. It’s a great brew method for bringing out body while still producing a clean cup.
To keep the shape of the filter when you pre-wet it, place it in the dripper as far as possible without distorting the filter and very quickly pour water the whole way around the edge in one fluid motion.
When using the Kalita with our recipe it’s very, very important to pay attention to timing your pours and keeping the coffee as agitated with your pours as possible. Again, as with Chemex and V60, pay attention to not pouring at the edges and pouring evenly on your entire bed.
For This Brewing Method You Will Need
Coffee/Water Ratio
32 g coffee to 500 g water
Brew Time
3 to 4 minutes
Grind
9 on a 1-10 grinder (quite coarse), 35 on the Baratza Encore
Directions
- Bring filtered water to a boil.
- Carefully rinse the paper filter, being sure not to compromise the shape.
- Add the ground coffee to the wet filter.
- BLOOM: Add 70 grams of water.
- FIRST POUR: At 45 seconds add 50 grams of water, bringing weight up to 120 grams. In order to add as much water as needed to the brew bed, pour quickly and deliberately in a circle.
- FOLLOWING POURS: Continue adding pulses of approximately 50 grams of water at a time. There should be about 9 pulses in total (pour into the center if needed so as not to go above the line of coffee already created).
- Brew should reach 500 grams around 3 minutes
- Brew should finish around 3:45 minutes
- Stir and enjoy!
